Couldn’t decide what type of salad to make today, but managed to create something pretty tasty even though the fridge contents were a little low.
If you are looking for Raw-Vegan salad you can either skip the chick peas or use sprouted chick peas or hemp seed instead.
Ingredients:
- 1 can chick peas (or sprouted chick peas)
- 5 tomatos, chopped
- 1 bag bean sprouts (probably about 4-6 cups)
- 1/4 cup cilantro, choppped
- sesame seeds
- 1-2 Tbsp Olive Oil
- Fresh Ground Pepper
- Several drops Sesame Oil
- 1 Tbsp Braggs Liquid Soy
- 2 heads romaine
In large salad bowl I added chick peas and tossed with a little olive oil and pepper. After rinsing the bean sprouts I tossed them with sesame oil and Braggs Liquid Soy – I often use a combination of only a few drops of sesame oil and no more than a tbsp of Braggs to create an “asian” tasting salad. Add chopped cilantro, sesame seeds and toss everything together. Let the mix marinade for about 1/2 hr or even more before adding the romaine. And lastly, once it’s had time to meld the flavours I add the greens, today was chopped romaine.
I always make very large portions of salads. This salad filled our extra large salad bowl, but we love salad and most days have salad for lunch and then again at dinner with something extra on our plate at dinner (i.e. cooked veggies, pasta, vegan sushi, pizza, etc.) so with our big bowl there is usually always enough for lunch and dinner - makes life a little easier.
Note on Dressing & Salad Prep ala Trine: Normally when I make salad I mix the veggies and let them marinade for about at least 1/2 hr before adding the greens. I find this really enhances the flavours. I don’t use “dressing”, I either use a combination of Olive Oil & Lemon or Lime, or for an asian type flavour I add a few drops of sesame oil and Braggs Liquid Soy (tastes like soy sauce but a lot less salt ). or any combination along those lines. I also love to add crushed garlic and/or ginger. I find any of these combinations work well and after resting for a while the veggie combination is always very flavorful.
Note on Soy Products: We don’t normally eat any soy based products and Braggs Liquid Soy is the only soy based product we use, and we use it maybe once a week. Did you know that 98% of the soy in the world is genetically modified? We were quite taken back by those stats, so we don’t eat soy. Also soy is meant to be as a condiment, but in North America it’s used in just about everything, as a filler or inplace of animal protein for a main dish. Also, soy is highly processed. So we have opted out.
