Tomato Brussel Sprout w/ Lentil Pasta

My new favourite pasta is made by Maria’s Homemade Noodles (their website will be up and running soon!!).  They are made locally in southern Ontario and what I love most is the noodles are made from legumes!!  That’s it, only legumes!!  Red lentil, chick pea or green lentils.  Can’t get more wholesome than that!!

Here’s a simple pasta dish using their noodles.  You can use whatever veggies you have on hand to suit your tastes!!

Ingredients:

  • 2 tbsp olive oil (or use water if you are oil free)
  • 1 red onion, chopped
  • 2 tomatoes, chopped
  • 1 cup brussel sprouts, cut in quarters
  • 1 jar tomato pasta sauce, my favourite is an organic spicy sauce from Italy called Sugo all’Arrabbiata by rustichella d’abruzzo!!  It has a really nice spice to it!!  We love it!!
  • 1/2 bag Maria’s Home Made Noodles – Red Lentil Fusilli

In a large fry pan, add 2 tbsp olive oil or water and heat lightly.  Add onions and cook until softened.  Add brussel sprouts and heat through until bright green.  Add tomato and tomato sauce and heat through.  Remove from heat.

Cook Red Lentil Fusilli as per directions.  Boil large pot of water, add pasta, reduce heat to medium heat and cook 6-8 minutes. I prefer cooking only 6 minutes.  Cooking instructions are very important otherwise the pasta will be too mushy!!

Salad Version:   There are days where I want something a little lighter, hubby will enjoy the pasta where as I’ll have a large bowl of spinach and add a little sauce on top of the spinach (either use before adding pasta, or with pasta).  Simply toss and serve and you have a yummy salad!!
