I love nut milks – and Cashew Milk is MY FAV! Ok I do love Almond Milk (check out my video) as well, but cashew milk is a tad easier to make as you don’t need the nut bag 😉 So when you are really strapped for time, Cashew Milk is a quicker option 😉 PLUS I find a nice Cashew Milk is like having a wee bit of dessert during the day!

Nut milks are wonderful to use on your fruit/oats in the morning, in your coffee, used in soup to cream it up, added to smoothies (my fav is cashew milk, banana, cocoa, vanilla, almond butter & spinach 🙂 oh and I especially love to have a wee glass of cashew milk at any time of day, just because! 🙂

Yes, the Cashew Milk/Smoothie is higher in fat, but I keep the portions small and it is healthy fats from the nuts & hemp seed, so in moderation it’s all healthy 🙂 PLUS it gives you a great boost of protein (8.3 g/serving) and a boost in energy if you add the Medjool dates.

The beauty of using Cashews (vs. Almonds) to make nut milk is there is NO PULP! So you don’t need to use a nut bag to remove the pulp! Woohoo, perfect for folks like me who like super easy peasy!! 😉  Ok, but if you do like/prefer almond milk (or any other nut milk) you are certainly use whatever nut you like and if there is pulp you can strain the pulp from the milk using a nut bag, which is also easy peasy, but does take a few more minutes.

Luckily, the soaked cashews and my High-speed Blender create a very creamy consistency and there is no pulp – it’s just perfect as it is!!

Oh, you can also use less water and perhaps reduce dates/vanilla and make more of a “cream” that is great as a cream substitute in your coffee or even as a topping for something like Cacao-Avocado Pudding!

Ingredients – Creamy Cashew Milk:

Yields 4 servings of 250ml (1cup) each

  • 3 cups water
  • 1 cup cashews, soaked for 2.5 hrs and rinsed well
  • 3 Tbsp hempseed
  • 3 Medjool dates, pitted
  • 1/2 Tbsp vanilla (you can use less, I just LOVE vanilla)
  • Optional:  Wee sprinkle of cocoa or raw cacao

Add all ingredients to your Vitamix blender.  Blend on low speed and gradually increase speed.  Blend on high until smooth and frothy. ~ Creamy Cashew Milk ~ Creamy Cashew Milk

    I also like hemp milk, as easy as cashew milk; no straining.

    1. Oh yes Francine, that’s another great combo and hemp milk is super high in protein! No straining = easy peasy, I’m with you on that 🙂

    Any chance they blend enough with any blender? I’d like to try it and do not have a vitamix. I DO have a nut bag though, if you think that combo would do the trick.

    1. Hey Kara-Lea – absolutely you can use any blender. The advantage of a high-speed blender is the cashews will be fully broken down and you won’t have any bits/pieces. If you soak the cashews in advance for 1-2 hours this will make them softer so they may blend better for you – or if there are bits you can use your nut bag to strain 🙂 Let me know how it works out, Enjoy!
