This baby is not for the faint-at-heart, but it is – without a doubt – the height of nutrition with a megga does of greens and all things good.
But be warned, if you are just transitioning to plant based, I’d hold off on trying this one until you have conditioned yourself to “true” green smoothies. Those of you who are seasoned will love it, I’m sure!!
- 4 cups water
- 1/2 cucumber, chopped
- 2 broccoli stalks, chopped (left over from Broccoli, Tomato & Bok Choy Salad)
- 2 stalks celery, chopped
- 2 lemons, peel removed (lemons are great to ‘cut’ the green flavour)
- 1 inch ginger or 3-4 cloves garlic (ginger and/or garlic are also great to ‘cut’ the green flavour and also they also really ‘warm’ your insides)
- 1 tbsp chia seed (remember chia seed is very gelatinous, so your smoothy will get thicker over time if you aren’t able to drink it right away)
- 1 head bok choy, chopped
- 1-2 handfuls spinach
Add all ingredients to your blender (for me that’s my can’t-live-without Blendtec, especially for a smoothy like this where you want a very fine, smooth & fluffy texture!).
Blend on low speed and gradually increase speed. Blend on high until smooth and frothy. This batch made almost 2 litres.
