I’m not sure if you’ve heard, but Kris Carr has a new book Crazy Sexy Kitchen, that will be released October 30, 2012.  I already pre-ordered my copy 🙂 and can’t wait!!  You can also signup for her Sneak Peak and get a wee bit of insight to all the fabulous wonders and recipes that will be included in her book.  Make sure you signup today for her Sneak Peak…. We just tried one of the recipes included in her Sneak Peak, Save The Tuna Salad on Rye , and it is really REALLY tasty and a definitely keeper – t’ya like that’s a surprise 😉 – everything she shares with her peeps is a keeper!!

You’ll find the recipe in her Sneak Peak.  The version I have below has been modified quite a bit as I didn’t have all the ingredients so had to ad-lib a bit (ok I know, I always ad-lib and wing it – who am I trying to kid!!).  I also included a salad-variation as I’m staying away from grains these days (or trying to :-)).  Hubby enjoyed the sandwich version and asked for seconds twice!!  🙂

Ingredients:  (made enough for 5 sandwiches & 1 salad variation):

  • 1 cup raw almonds, soaked for a few hours
  • 1 cup sunflower seeds, soaked for a few hours
  • 2 small stalks celery, or one large stalk, finely chopped
  • 1 small red onion, finely chopped
  • juice from 1 lemon
  • 1 tbsp agave
  • 1 tbsp dulse
  • fresh ground pepper
  • Dijon mustard
  • sour dough spelt bread (2 slices per sandwich)
  • lettuce (1-2 leaves per sandwich)
  • sliced tomato (2 slices per sandwich)


Sandwich: Add nuts & sunflower seeds to food processor and blend until fine.  Transfer to a bowl, add celery, red onion, lemon juice, agave, dulse.  Stir well together.   Spread dijon mustard on bread, top with lettuce and sliced tomato, scoop of “tuna” and top with 2nd slice of bread.

Salad Variation (Raw & Gluten Free):  I’m not eating bread these days, so for myself, I made a salad and included a scoop of  “tuna” and 2 tomatoes chopped.  I mixed well and topped with lots of fresh ground pepper.  It was very yummy indeed!!

    Can I use raw almond meal? Or is the texture not the same?

    1. I’m not sure Mariam, I’ve only tried this Kris Carr recipe once. If I were you I’d give it a try. I’d skip the blender step since the nuts are already ground as a meal. The overall texture may be a bit smoother, but I think it might be ok. Let me know how it goes xo
