Blueberry Oats & Almond Milk

DSC_0003_watermark blue oat pump cranHubby’s favourite breaky that really hits the spot.  As a bonus, it’s low in sodium, high in calcium and dietary fiber, a good source for iron thanks to the pumpkin seeds and also high in Vitamins C and E. Not to mention it provides plenty of protein.

Ingredients:
1 serving

  • 2 cups fresh blueberries
  • 1/2 cup uncooked oats
  • 1 tbsp dried cranberries
  • 1 tbsp raw pumpkin seeds
  • 1 cup unsweetened almond milk

Add blueberries to bowl, top with oats.  Sprinkle cranberries & pumpkin seeds on top.  Pour almond milk overtop. Enjoy!!

Blueberry Powerhouse Green Smoothie

This one is chocked full of green power with the addition of sunflower sprouts.  Did you know the sprouts contain more nutritional value and more protein then their grownup counterparts?

Sprouts are a very powerful source of protein plus they provide vitaminx A, B complex, C, D, E and potassium, calcium, magnesium, folic acid and iron!!  How great is that?

For an added punch of protein, add sprouts to your smoothies as often as possible.  Pea sprouts and sunflower sprouts are, in my opinion, the mildest flavour sprouts and work well in smoothies.

Ingredients:
Yield 1.5 litres

  • 3 cups water
  • 2 cups blueberries
  • 1 banana
  • 2 Tbsp chia seed
  • 2 big handfuls sunflower sprouts
  • 2 big handfuls spinach

Day 6 – Clean(er) Eating Program

The last day of 2012 and I’m well on the road to feeling more clarity and “cleaner”.  Yippee, I’m loving this Clean(er) Eating Program.  I’ve done this for two years now, started with cleaner eating on Boxing Day.  Last year I tried my 5-Post Christmas Cleanse and this year this 12-Day Clean(er) Eating Program.  I must say, it’s a great way to say farewell to a year, and a great way to welcome a new year… by feeling cleaner with more clarity of mind!!

Here’s a glimpse into the first 5 Days if you missed it!

Well to close out 2012 I scanned the fridge to find what combination was in store!!  Kiwi, blueberry, cashews!!  Sold!!  And with that a New Year’s Eve (day) Smoothy was created!!  Yum!!

It was a busy day and the smoothy kept me going all morning so I didn’t have anything until dinner, although our dinner was an early dinner while we welcomed the German/Danish New Year at 6pm our time

Ratatouille is one of my favourites, so easy to make, so versatile.  You can use whatever vegetables you have on hand and it can be used in wraps, as a stew, with rice, and the list goes on.  We enjoyed as a stew, it was yummy on a cold winters night and a great way to close the year.

2012 New Year’s Eve (day) Smoothy

I’m not sure how many smoothies I’ve had this year, but I’m pretty sure it’s a minimum of 365 :-) … but then again, I did  do the 4-day Green Smoothy Cleanse in May 2012 so that will likely bump up the number even more!!

Yup, there’s no denying – I LOVE my smoothies!!  So when I was thinking about this morning’s breakfast – I followed my regular approach – I scanned the fridge to see what I had to spark ideas for the next smoothie creation.  Et voila… Blueberry, Kiwi, Cashew & Date Smoothie was born!!

Ingredients:
Yield 1.5 litre

  • 3 cups water
  • 2 cups blueberries
  • 4 kiwi, peeled & cut in half
  • handful raw cashews – best to soak overnight (I measured this time and my handful is about 1/4 cup)
  • 3 medjool dates
  • 3 big handfuls spinach

Yum!!  That’s all I can say, BIG Yum!!  No doubt, my addiction de jour is Goji Berries!!!

Ingredients:
Yield 2 litres

  • 3 cups water
  • 1 banana
  • 1 cup blueberries
  • 1/4 cup goji berries
  • 2 BIG handfuls spinach

This was a new oh-so-delicious creation that I’m sure you will love.  I love clementine’s at Christmas time so this smoothy was perfect Boxing Day breakfast that I enjoyed throughout the morning to kickoff my 12 days of clean(er) eating!!

Ingredients:
Makes 1.5 litre (6 cups)

  • 2.5 cups water
  • 2 cups blueberries
  • 4 clementines, peeled and sectioned
  • 2 big handfuls spinach

As many of you know, I’m totally addicted to blueberries.  Heck, I’m addicted to all berries!!  Here’s another easy-peasy creation for your morning smoothy.

Ingredients:

  • 4 cups water
  • 2 bananas
  • 1-2 cups blueberries
  • 2 Tbsp flaxseed
  • 1 Tbsp raw almond butter
  • 4 medjool dates
  • 6-8 kale leaves, stalk removed

Add all ingredients to the blender.  Blend on low speed and gradually increase speed.  Blend on high until smooth and frothy.  This made close to 2 litres.
