Ok, this is such a simple Zucchini Noodle & Cherry Tomato Salad that is incredibly nutritious and delicious. And believe it or not, your mind will LOVE the zucchini noodle texture… variety in plant-based eating brings on deeper psychological satisfaction ~ I know sounds odd, but it’s TRUE!
- 1 zucchini
- 1/2 box cherry tomatoes, cut in half
- drizzle olive oil
- 2 cloves garlic, chopped
- fresh ground pepper
Add cherry tomatoes (or whatever veggies you like, I also like with brocolli). Drizzle with olive oil and lots of fresh ground pepper. Toss and serve!!
TIP: Sometimes I make in the morning and let it sit through the day in the fridge to almost “marinate” – I love it that way too! 😉
