Ok, this is such a simple Zucchini Noodle & Cherry Tomato Salad that is incredibly nutritious and delicious. And believe it or not, your mind will LOVE the zucchini noodle texture… variety in plant-based eating brings on deeper psychological satisfaction ~ I know sounds odd, but it’s TRUE!

Ingredients

  • 1 zucchini
  • 1/2 box cherry tomatoes, cut in half
  • drizzle olive oil
  • 2 cloves garlic, chopped
  • fresh ground pepper

Add cherry tomatoes (or whatever veggies you like, I also like with brocolli). Drizzle with olive oil and lots of fresh ground pepper. Toss and serve!!

TIP: Sometimes I make in the morning and let it sit through the day in the fridge to almost “marinate” – I love it that way too! 😉

I used my Spirooli Slicer using the small noodle blade. The Joyce Chen Spiral Slicer is also nice and created more of an angle hair style noodles.

  5. I have the Spirooli slicer and I am going to try it for the first time today to make zuke noodles for pesto sauce. This recipe looks delicious also – I have it written down. Wish me luck on using the Spirooli.

    Yummy! I plan on making that this week or at least something similar. However, I don’t have any fancy tools for turning the zucchini into noodles. I will have to get creative 😉

    1. Davs du! Try using a potato peeler and creating wide noodles slicing the length of the zucchini…. a great way to create the noodle effect 🙂
