Not only does Elation Centre have some amazing yoga and running programs, but Donna Davis the owner also has a wealth of health and nutrition information including these delightful pancakes. My recipe is inspired by Donna’s Blissful Banana Pancakes.
- 1 cup whole wheat
- 1 Tbsp baking powder
- 2 medium sized ripe banana, mashed
- 1 cup almond milk (or other non-dairy milk)
- 1 Tbsp vanilla
- 1 Tbsp ground flax mixed with 3 tbsp water
- 2 cups frozen berries – I used a mix of raspberries and strawberries
- 2 Tbsp maple syrup
Mix flour and baking powder and set aside. In small bowl, mash bananas and mix well until smooth. Add milk, vanilla and flax mixture. Whisk wet ingredients well together. Add a touch of olive oil to fry pan, heat lightly and cook pancakes.
Add oven proof plate to oven at 200 degrees F. and add pancakes to oven plate to keep warm while cooking remaining pancakes.
In sauce pan, add frozen berries, heat at low head for 20 minutes until thawed. Add maple syrup and heat ever so slightly. Serve berry mixture over pancakes.
