Blueberry Oats & Almond Milk ~ Hubby’s favourite breaky (ok, next to green smoothies, I LOVE it too! 😉 ) and this bowl of goodness really hits the spot.
As a bonus, it’s low in sodium, high in calcium and dietary fibre, a good source for iron thanks to the pumpkin seeds and also high in Vitamins C and E. Not to mention it provides plenty of protein.
Ingredients – Blueberry Oats & Almond Milk
- 2 cups fresh blueberries
- 1/2 cup uncooked oats
- 1 tbsp dried cranberries
- 1 tbsp raw pumpkin seeds
- 1 cup unsweetened almond milk (better than store bought ~ make your own Almond Milk or (even easier) Cashew Milk)
Add blueberries to bowl, top with oats. Sprinkle cranberries & pumpkin seeds on top. Pour almond milk overtop. Enjoy!
Option: Replace raw/uncooked oats, cranberries & pumpkin seeks and instead make a batch of Granola! Another yummy option!
