I make our go-to-work (aka go-to-school) lunches every day and usually this ritual occurs at 5am and I don’t want to spend a lot of time (although I’m up at 4:30am and totally a morning person :-D) but I’m still always looking for creative easy peasy salad solutions (ok truth be known, I’m kinda lazy when it comes to food prep so easy peasy is a must! ;-)).
Well this one is totally easy peasy and really only takes a few minutes. And if you make the dressing the day before, you can save even more time!
- 4 cups colourful salad leaves – yup, the bag I bought from our local health food store includes eatable flowers – certainly helps with the “Colourful” 😉
- 2 handfuls cherry tomatoes, cut in half (or leave whole if you are really strapped for time)
- 4-6 mushrooms, sliced
4 servings (you’ll have leftovers for tomorrow)
- juice of 1 lemon
- equal amount of olive oil
- 1 tbsp dijon mustard
- 1 tbsp hummus
Add salad leaves to lunch containers, top with tomatoes and mushrooms. To make the dressing, add juice of 1 lemon to a small mason jar. Add olive oil and add equal (ish) amount of the lemon by looking at the side of the jar to see the volume double. Add dijon mustard and hummus to the jar. Shake it baby, shake it good until well mixed!! Pour 1/4 of dressing for each salad, and store remaining 2 servings in the fridge for your next salad. Put the lid on your salad container and toss by shaking the container!
Et Voila, you now have an easy peasy lunch salad that’s all tossed and ready to go.
To complete the lunch, I included an apple and some fresh cut veggies (our fav’s are carrots, celery, brocoli, peppers, cherry tomatoes and/or cauliflower, etc.) and/or flaxseed crackers with hummus and/or salsa for dipping (I love LOVE to mix salsa and hummus ;-)) – try it!
