Pumpkin Recipe of the Week: Pumpkin Protein Balls
- 1 cup pumpkin puree
- 1.5 teaspoons pumpkin pie spice
- 1/2 cup almonds
- 1.5 cups old fashioned oats
- 1/2 cup flax or chia seeds
- 1 tablespoon honey (or if you are 100% vegan, you can use agave or maple syrup)
Combine all ingredients in food processor and blend. Scoop and roll into balls, refrigerate for 2 hours, and enjoy!
