Oh I love tis Spicy Creamy Cheesy Kale Pasta. It is sooo deeelish!
This recipe made enough for 2 for dinner and also gave us leftovers for lunch the next day.
- 1 bag (450g) of Maria’s Home Made Noodles, Chick Pea Fusilli (I love these noodles, they are local from Southern Ontario, and the only ingredient in all of the variations they carry is simply the legume, in this case chick peas!!)
- 1 cup raw cashews
- 2 garlic cloves
- 1/4 c almond milk
- 3 Tbsp salsa
- 1 heaping Tbsp nutritional yeast
- 1 tsp chili powder
- 1 tsp red pepper flakes
- 1/2 onion chopped
- 1/2-1 bunch kale, chopped
#1 Prepare Pasta: Cook pasta based on package directions – Maria’s Noodles are simple to make – bring water to boil, place pasta in the pot, turn down to MEDIUM heat and stir the pasta frequently for about 6-8 minutes. Drain and rinse it.
#2 Make Spicy Cashew Cheesy Sauce: In blender add remaining ingredients and mix at low speed, gradually increase speed. Blend until smooth. You may wish to add more/less almond milk for desired consistency. I made it quite thick, but it would have been equally delivious using a thiner consistency. Go with the flow based on your tastes/desires for the day.
Other ways to use the Sauce TIP: The thicker version of this sauce would be fantastic as a dip with crackers or fresh veggies, or tossed with pasta on it’s own, or perhaps you have other creative ideas?
#3 Prepare Kale & Onions: In fry pan, heat 1/4 cup water. Add onions and fry a few minutes. Add kale and stir-fry until desired consistency and crispness (I like my onions cooked but if you are ok with raw onions you may wish to only heat slightly).
#4 Put it all Together: Drain and rinse pasta. Return to pot over medium heat to keep warm. Toss pasta with Spicy Creamy Cashew Sauce. Add Onion & Kale mixture and toss well.
Serve with salad – as a rule I normally have 3/4 of plate with green salad and 1/4 with cooked dish.
TIP for Leftovers: I love leftover pasta for lunch the next day – simply blend the cool pasta with 4 big handfuls of spinach, toss and serve for a delicous easy peasy lunch! You could also reheat the pasta and then toss with the spinach for a nice warm salad.
